Breakfast! Yes, you heard me. Breakfast is the absolute reason I jump out of bed. I freaking love breakfast and always have.
As a child, my dad worked long hours and we rarely ever saw him. He often worked the late shift and would get home around the time I got up for school. I hate getting up in the morning. I am a terrible morning person. However, my dad always made me scrambled eggs and toast, complete with a Flintstone’s vitamin. How could I pass it up?
Many people today don’t have time for a healthy breakfast or simply can’t stomach eating right when they get up. I believe it is the absolute most important meal of the day though. Out of all the ‘healthy-eating” myths I had to sort through over the years, this isn’t one of them. It has been shown that eating a well-balanced meal first thing in the morning will boost your metabolism for the day. Also, It just starts your day off right.
For the last five years, yea for five years straight since I first started paleo, I have started off my days with same exact breakfast and I love it! Now, I know that isn’t for everyone and you may need more variety in your choices, but this is one solid dish you might want to try. I saute bacon, mushrooms, onions, bell peppers and spinach in olive oil with a little salt. I top it off with two eggs over medium. It has so may benefits. You achieve your goal of veggies first thing in the morning. It’s packed full of protein and super easy to make! And it so good! Just give it a try!
